Pinterest Recipes

I LOVE pinterest and I love to look for fun and new recipes to try out. Mark is a picky eater and by picky I mean he doesn't eat veggies or fruit. So its hard to find something he will like but when I do its like I hit the jackpot. So far I have found 2 dinner recipes that he just loves, I know when he likes it when he goes back for seconds. Recently I found a healthier recipe for a cheesecake. I am trying to be healthier and loose some baby weight but I still have a sweet tooth so what better than to find a healthier, sneaky way to eat cheesecake. But first let me share Mark's favorite ( and mine too)

Loaded Potato & Chicken Casserole
1 lb boneless chicken breasts; cubed 1"
6 medium skin on red potatoes; cut in 1/2" cubes
1/3 cup olive oil
1 1/2 t salt
1 t black pepper
1 T paprika
2 T garlic powder
2 T hot sauce; more if you like it HOT
TOPPING:
2 cups fiesta blend cheese; shredded
1 cup bacon; crumbled
1 cup diced green onion
How to Make:
1. Preheat oven to 400 degrees. Spray a 9X13 baking dish with cooking spray.
2. In a large bowl, mix together the olive oil, salt, pepper, paprika, garlic powder, and hot sauce. Add the cubed potatoes and chicken and stir to coat. Carefully scoop the potatoes and chicken into the prepared baking dish..
3. Bake the potatoes and chicken for 55-60 minutes, stirring every 20 minutes, until cooked through, crispy, and browned on the outside. While the potatoes are cooking, fry your bacon (about half a pound).
4. Once the potatoes and chicken are fully cooked, remove from the oven. Top the cooked potatoes with the the cheese, bacon, and green onion. Return the casserole to the oven and bake for 5 minutes or until cheese is melted.
Serve With: extra hot sauce and/or ranch dressing or sour cream!
***NOTE***
Thanks to Mark not liking onions I don't add any green onions to the main dish only to my portion as garnish

Skillet Enchilada Recipe
Ingredients
  • 1 tablespoon of vegetable oil
  • 12 corn tortillas
  • small yellow onion, diced
  • 1 pound of ground beef
  • Salt and pepper
  • 1 large can of red enchilada sauce (28 ounces)
  • 1 can of black olives
  • 1-2 cups of shredded cheese
  • sour cream for topping
Instructions
  1. Cut a dozen corn tortillas into bite size pieces.
  2. Heat vegetable oil in skillet on med high heat and pan fry tortillas until slightly toasted and lightly crispy.
  3. Remove from pan and brown onions and ground beef in same skillet, seasoning ground beef to taste, until ground beef is completely cooked and onions are softened.
  4. Add large can of enchilada sauce and simmer for a few minutes.
  5. Then add tortillas back into pan and stir.
  6. Top with black olives, shredded cheese and sour cream.
**I ran out of corn tortillas so in the end I add corn chips I had on hand and it worked out great too**

My new favorite Cheesecake inspired recipe.

1 6 oz. Greek Yogurt container ( I used vanilla but you can use plain)
1/2 T Cheesecake Jello pudding mix, sugar free & fat free
Splash of milk

Mix well and let sit. It might be a little grainy in the beginning but longer you let it sit the yummy it gets. I use granola on the bottom for the crust.

Valentine's Day

Mark's homemade Valentine's Card. 
My Valentine's Day was not fancy or romantic, heck I spent the day in yoga pants and sweatshirt, no fancy clothes for me. Why, you ask? Well I was home with my 2.5 month old baby girl and taking care of the house. But we what we did do was make a great Valentine's present for Mark and for my parents who showed up the next day. Cause who doesn't love to receive a homemade present from the one they love. The present Landry and I made turned out cute, but let me tell ya I ended up with paint all over me and Landry ended up in the bath tub right after it. But the best part of being crafty is seeing the faces of those getting the gift and knowing they will cherish it beyond the one day of Valentine's day.
                   Landry made this for her Nonnie & Nonu.                 

What did I get for Valentine's Day? Well I got my favorite flowers (tulips) and chocolate covered strawberries. I loved it all!! He did good!!

Stock Show with Landry

Well Miss Landry can say she has already experienced her very first Stock Show, and at the ripe old age of 2.5 months old. We like to start them early in Texas. The only bad part (or good depending on how you look at it) is that Landry slept thru most of it. And the part that she was awake for I sadly didn't get any pictures of her awake at it. Landry and I went to San Antonio Stock Show & Rodeo this month to take some of our 4-Her's to the show to be tour guides to the local elementary school kids. We had a great time my car was full of girls and I couldn't have made the trip without the girls they were the best to Landry and to me. They helped so much with Landry and didn't mind helping out at all. Best part was the girls were troopers while I changed Landry's poopy diaper on the side of the road in downtown Austin in the front seat of my Tahoe.

Sadly the weather was cold at the stock show and not warm like it was said to be. *damn weatherman lied* But Landry was such a good baby, but then again she always is. She slept thru the kids getting
the run down of the day and the bus loads of kids showing up. But she did wake up enough to see all the animals in the HEB building. I think the turkeys were her favorite cause the Tom turkey was strutting the most and was super loud. I even liked him and I am so not a fan of birds. I can't wait to actually have Landry awake at the stock show and see all the animals and get a kick out of them. I know there will be plenty of stock shows in her future.

Where did January go??

It seems like the other day that we rang in the New Year and it was the beginning of January. Now here it is the beginning of February. Time flies when you have a little one and are swamped at work. Luckily I have an amazing support system when it comes to everything. I could ask for a better family to be in and I have some great co workers who are just as awesome. They help me all the time even if they don't know it. 
                                                                                      

 In January, Landry had her first set of shots and I think it hurt me more than it hurt her. Landry isn't much of a crier but when those came she had the biggest crocodile tears ever. I wanted to cry too. Our little girl is growing so much was 9pounds 9.5 ounces and 22 inches long at her 2 month check up. I  couldn't believe she had grown 4 inches in 2 months. She is our little weed. On top of all the growing she is doing her favorite thing is to stick her tongue out and blow bubbles. Landry is beyond happy all the time. If she is crying is she is just hungry or has a gas bubble. Landry doesn't even cry when she wakes up. I keep telling Mark we should have 12 more if they are all going to be like Landry. But I don't think we are ready for a soccer team of kids. We are just enjoying every moment we can with the sweetest baby.

Big things are in the works for 2014 for our little family. No we aren't getting a new puppy, or having a new baby. But we are going to have a WEDDING!! Thanks to Mark, popping the question sometime this year we will have a wedding. I have no idea how big, when, where or any details about the wedding. My focus has been on Little Miss and daily life. I guess when things slow down or we happen to find the right time we will get married. We aren't in a HUGE rush to run down the aisle. We are happy and loving  every minute of what we have. Don't get me wrong I can't wait to be a Clark, since everyone is a Clark in my house already, but at the same time I don't want to rush it and it not be what we want and where we want it. Trust me , Vegas keeps looking better and better all the time. I don't see a giant wedding in our future since we both have been married before. I see something more intimate and small. But one never knows. I can see the reception being more of the highlight! 

February is going to fly by just has fast as January, we have big plans for it. My parents will be in town for a week, not to see me but to see Landry (that's ok I know where I rank) and Landry will go to her first stock show in San Antonio. I can't wait to see what else happens in this short month but I know it will be fun and exciting.
